CoCo Gravy

I used to try some new items when I find time. It has been a long time since I got married early 2009. So now, being home alone I gave it a try again. Below is the recipe for the CoCo Gravy which was a random attempt ;-) but worked out. So thought of sharing with you.

Am not a pro on wring recipes, so you have to bare with it.


Items:

Onion 1 Medium Size
Tomato 1 Big Size
Green Chilly 2 (or just 1 if you don't like it to be hot)
Oil 3 TB Spoon
Ghee 2 TB Spoon
Veg of your choice: Potato, Carrot/Beans, Cauliflower,Mushroom
Fresh Green Coriander 200 Grams
Giant Green Leafs
Diluted Coconut Milk - 200 ml
Ginger - 5 small slices

Process:

1. Heat the oil in a tawa and fry Onion slices, Giant Green Leafs, tomato, ginger slices, and coriander leafs (add it at last)
2. Let this warm and grind this smoothly in mixer
3. Heat ghee in tawa, fry the veg of your choice with two small slices of tomato and few onion slices
4. When these are fried to golden color, add the you made at step 2
5. Add 50 ml of water and dilute it and let it heat for 30 seconds
6. Add the coconut milk to it and add salt to your taste
7. Boil this until it gets thick and vegetables get boiled well.
8. Serve along with chapatti or ghee rice.
